Blaue Spirulina Muffins

Spirulina muffins

Ingredients (12 servings)

  • 150g butter
  • 100 g sugar
  • 250 g flour
  • 1 pack vanilla sugar
  • 1 pack baking powder
  • 2 eggs
  • 2 lemons (juice)

Spirulina glaze

  • 100 g icing sugar
  • 2 tsp spirulina powder
  • 200 ml water
  • coffee filter

preparation

Let the butter soften and mix with the sugar and vanilla sugar. Stir in the two eggs one after the other. Squeeze the juice from the lemons and add to the dough mixture. Preheat the oven to 160 degrees. Put the muffin batter into muffin cases (approx. 2 teaspoons per case). Bake in the preheated oven for approx. 25 minutes.

In the meantime, the natural blue color is prepared. Spirulina contains a natural color pigment that gives the algae its intense blue color. However, since the powder is more green, the blue color must first be "filtered out". To do this, stir the powder into 200 ml of water until the powder has completely dissolved. Then set the spirulina-water mixture aside for about 30 minutes.

The icing is only applied once the muffins have cooled completely.

The spirulina-water mixture is now slowly poured through a coffee filter. The filtered liquid is now a strong blue and is collected in a container. Now put the powdered sugar in a bowl and slowly add the blue liquid. Stir the mixture well until no lumps are visible. If the mixture is very thin or thick, add more powdered sugar or blue liquid if necessary.

Then spread the blue icing on the muffins.

Tip: To make the muffins shine even more intensely blue, we spread blue Smarties on the icing.
