Ingredients (4 servings)
- 250 g lamb's lettuce
- 2 rolls of goat cheese
- 150 g raspberries
- 2 handfuls of pine nuts
- approx. 4 tablespoons white vinegar
- approx. 8 tablespoons olive oil
- 2 teaspoons Lüttge raspberry powder
- Salt pepper
preparation
First, wash the lamb's lettuce and remove the unsightly leaves and roots. Then lightly roast the pine nuts in a pan without fat until they are lightly browned.
Next, the goat cheese is cut into slices about 2 cm wide.
Preparing the dressing: Now put 2/3 of the raspberries in a container and puree them with a blender until they form a fine mass. Then add the vinegar, olive oil, 2 teaspoons of Lüttge raspberry powder and a pinch of salt and pepper and mix everything together.
Now prepare the salad by dividing the lamb's lettuce between four plates and adding the goat's cheese and the remaining raspberries. Then sprinkle the pine nuts over the salad and drizzle the raspberry vinaigrette over the salad. The salad is now ready to be served.
